Hello everyone!!!

Next week I am traveling (yes, again- but vacation this time!). So, I am having seminar covered both classes (section 01 and 06). I am not going to be around Internet access both seminar times- but I will be in class all week. The only thing I am missing is seminar.

Now as to UNIT 8 PROJECT

1. Read directions carefully. They will walk you through everything you need to do.
2. Make sure you follow all of the directions and submit everything you are supposed to. Just upload everything in the drop box as multiple files can be put in one dropbox.
3. It is worth 150 points THUS, I expect to see some good work and more than your normal projects.

a. Use references and citations- refer to the textbook A LOT!!!! I want to see critical thinking. I want to see that you integrate the material from the book to what you found in your diet.

DO NOT SAY: I NEED TO EAT HEALTHIER. I NEED TO ADD FRUITS AND VEGETABLES. I KNOW THAT ALL READY AND SO DO YOU. You did not take 8 weeks of a college nutrition class to learn that. I will not accept that as an answer to anything.

I hope everyone is reading what I send back to you graded. Many students are not doing references nor are they naming their files right. Extra points will be deducted on this project for those issues.

I expect I will read a lot of WONDERFUL work and look forward to seeing them.

I will be available pretty much as normal. I fly on Monday in the afternoon, so I won't be available Monday.

Hello all!

I am traveling tomorrow through Saturday late at night. For Wed. Seminar - section 06- I will not be conducting seminar but another peer will be there for me.

I would have said something earlier but I did not know about that- I assumed they wanted us to leave the meetings- but our dept. chair has set this up. You will have a good seminar with Conneye Kuratko who is a friend of mine as well as instructor at Kaplan.

I will post more about your projects soon. I am going to try to keep up with grading.
I will be at Kaplan's graduation on Saturday and look forward to meeting some of my past students graduating.

Update on my activity 7/14

Hello all!!

Right now I am in Washington DC and am presenting on the use of blogs, RSS feeds and updates inside a course management systems such as the one you use, except called Blackboard.

I have been really busy and am trying to keep up. If I do not get back as fast as normal, it is because I have been in meetings all day.

I get home on Saturday- but I am here- I just can't really call anyone until then.

I will be posting some information about unit 6 and hints on what you need to do- probably tomorrow night!!!

So, be patient with me for a few days!!!!

Wed night seminar- see you tomorrow night!!!!

Monday- I will get the grading for seminar done by tomorrow night.

That is a crazy picture of my dog- who is an irritable, sick, old lady- she does not like my grandson- and he crawls faster than she can go- so it is a challenge to have to little movable objects underfoot!!! My grandson is into everything- nothing is sacred!

Do NOT take aspirin without doctors okay.

One of the articles talks about aspirin and how it prevents clots- but you can NOT take this unless you contact your physician. Please do not do anything like this as this could lead to a serious problem. Aspirin causes bleeding and ulcers- so it needs to be monitored by the doctor.

Unit 5 Project Expectations

Hello all,

I hope you review postings as I all ready wrote about this project but having graded some, I want to review my expectations.

This is a college class and you are doing an "Analysis" of your diet. On the first day of class, I think that the majority of you would have agreed, you needed to improve your diet. You also knew that you probably needed more fruits and veggies and less fat in your diet. You do not need a college class and a big textbook to tell you that.

Thus, I do not accept that type of response.
I expect an analysis. Where you look at the findings from the diet analysis. You then look at the pyramid. You analyze your own pyramid via "food servings" which is not the same as amounts of food- see earlier blog where I talk about servings size.

This analysis means you really think about what you discovered. You write MORE than 2 sentences. I expect close to 500 words in the analysis. You go to the textbook and back up what you are saying about your diet.

This project is worth 100 points- it means that it takes longer. Yes, it will. It will take you up to 3 times as long as any other project- but it is worth 2.5 times more points.

Please think about what you are writing. Analyze, critique, be critical of your diet and see what you can do to make it better. Watch discretionary calories.

Our Student Does Great Job and agrees to share 7/11

Michelle Thieme (SC115-06, 0903A) wrote the following in her project and I felt that it explained the process so well, that I asked if she minded I share this with you. I think it helps explain what happens to fiber, cholesterol and bile!!!

Great job Michelle and thank you for sharing!!!!

Here is what fascinates me(Michelle Thieme) about soluble fiber, (because I love circular logic and if this process is not circular, then I do not know what is), it helps to prevent the absorption of cholesterol because it works in conjunction with liver bile acids to properly digest fats. Guess what the bile acids are made out of? Cholesterol! And, here is where it gets really fun, because soluble fiber removes cholesterol before it can be absorbed, it creates the need for the liver to use more cholesterol in order to create more bile. This means that by absorbing and causing the liver to have to use up more cholesterol to create more bile acids, less cholesterol is actually being absorbed and stored by the body, (World’s Healthiest Foods.org, 2009). How to determine serving size for chart in unit 5 project 7/8

I hope that you review this carefully as this is reviewed in the unit 5 mini-project carefully when grading. IT IS WORTH 100 POINTS.

The new dietary guidelines on which MyPyramid is based, promoted fruits and vegetables and whole grains. At the 2,000 calorie level, here's what the guidelines would suggest.

* Fruit Group should provide 4 daily servings, or 2 cups.
* Vegetable Group should provide 5 servings, or 2.5 cups.
* Grain Group should provide 6 ounce-equivalents (1 ounce-equivalent means 1 serving), half of which should be whole grains.
* Meat and Beans Group should provide 5.5 ounce-equivalents or servings.
* Milk Group should provide 3 cups/servings.
* Oils should provide 24g or 6 teaspoons.
* Discretionary Calories: These are the remaining amount of calories in each calorie level after nutrient-dense foods have been chosen. Up to 267 calories can be consumed in solid fats or added sugars if the other requirements have been met.

Common Servings and Portion Sizes - What's the Difference?
Though "portion size" and "serving size" are used interchangeably, there is a difference. Knowing the difference makes it easier to compare what you eat to the MyPyramid's daily recommendations.

The USDA MyPyramid provides food group recommendations in "ounces" and "cups."

Recommendations for the Grain Group and the Meat Group are provided in ounces, while recommendations for the Milk Group, Vegetable Group and Fruit Group are in cups.

The serving size that is equal to an "ounce" or "cup" are provided for each food group.

For example:
1 1/2 ounces of hard cheese or 8 fluid ounces of yogurt count as 1 cup from the Milk Group, and 1 slice of bread or 1/2 cup of cooked pasta counts as an ounce from the Grain Group.

For your chart: You are to use these as to the way to fill out the chart you submit for grading.
If you have 8 ounces of yogurt, that is equal to 1 serving of a Milk group. So you put 1 in the column for Milk.

If you have 1 slice of bread - you would put 1 serving in the Grain group.

The total at the bottom is the total of each group that you had in servings. The pyramid, that is how it is configured. I have attached another document that will help with determining serving size. It is in doc sharing.

IMPORTANT
NONE OF THIS IS NEW INFORMATION. IT HAS BEEN MENTIONED BEFORE. IN THE SYLLABUS OR OTHER DOCUMENTATION.

1. You must use the library
2. web resources not accepted and the grade will be an F.
3. If you do an exact quote of anything the most words in any document you submit should be 2 sentences. These words you quote are NOT counted as word count in your document. IT IS PLAGIARISM.
4. Rewording and giving credit is NOT plagiarism. Say you read a document, turn it upside down and rewrite in your own words. All you need to do is use a citation at the end of the paragraph you wrote.
In fact, using APA is how you prevent plagiarism- you give credit to the original author.

Unit 4:
In the unit 4 project you must use references and citations from ONLY the library. NO WEB RESOURCES WILL BE ACCEPTED.

a. you must reference the articles. Here is a web site to go to that will help you format the references.

http://www.bibme.org/ This site will write the references that you put at the end. You put in the information at the end, and it will format it for you. These are called references.
General format:
Last name, initial. (year). Title of resource. Retrieved month day, year, from database used in library.

b. Citations are in the body of your document. They are done to give credit to the person who wrote the original article. These are important to prove you are not plagiarizing.

Unit 5
If you do not have unit 2, Diet Analysis, handed in. You can NOT do unit 5 project. It will not be accepted until the Diet Analysis project is submitted. I will not grade unit 5 project until I grade unit 2 project.
The reason for that, you can't do unit 5 without unit 2 information.


The Survey: 22 students have completed it. Thank you so far. I would like at least 40 to complete it. Please help me try to fix the diet analysis problems. If you are using it and had no problems- I want to hear from you too. Please have a voice and do this for me.


July 4'th weekend.
Independence Day will be observed on Friday, July 3rd. In the School of General Education, that means that there will be no seminars held July 3- 5. (Friday, Saturday or Sunday)

I had my dept. chair review my blog and she saw I got confused and made a mistake with the code

Students MUST use DAPLUS- in their access code.

Do not use the numbers before DAPLUS.

So, instead of 110462.DAPLUS-abccccc, it would just be DAPLUS-abcccc.

Also make sure you use the correct URL (http://kaplan-daplus9.cengage.com).

Sorry about the mistake- I interpreted the directions wrong. That was my mistake.

Unit 3 6/24 Please read

By now there are a few things you should realize I expect in your assignments:

1. References and citations
2. Your file named with your name in it
3. Follow all of the directions of the assignment
4. 500 words approximately
5. Try to do APA- we have a guide on the home page

I also want references in the discussions. When you do this weeks project there are 2 parts, the carrot and the pizza. Give equal responses. Do not do a one liner on the pizza and please look at the chapter as you write this.

In order to help you follow directions:
a. Read the assignment directions
b. take notes and highlight page numbers, questions you need to answer
c. write an outline first
d. Then put into the correct essay format

The key is doing all of these steps.

I have found that the link in unit 2 for the project is out. I am working on getting it fixed.

If you can not get into diet analysis do not post it in the seminar comment area. That is not a communication tool for you guys to communicate with me. Email is. I will need you to email me for any problems. Do NOT put them in the comment areas.

Please do not email ALL students. There is an area to post questions on the home page where all the students can see it if I do not get back to you. But, you MUST give me 24 hours to get back to you. I have a life and do not live online. Please respect my time too.

Seminar and codes 6/16/09

Monday night seminar went good!!! However, we really did not have time to go over any nutrition information.

As I indicated last night, EVERYONE must look at announcements and go to each unit page to see directions for what needs to be done. Many students did NOT read any announcements, know about this blog or know anything in the course, but went ahead to post and attempt to do homework- that just amazes me that any student can enter a course and not read what the instructor has put into place.

I expect all students to read these and I will not repeat answers to questions that I have answered several times via emails and announcements and the blog. It is your responsibility to know where your emails are and this blog is.

I am going to email this to the Monday Seminar night students.

As we discussed, your codes to enter the Diet analysis is in the Seminar grade comment area. I will not give out codes and you will always be able to find it. I will post an LARGE announcement for this on the home page too.


If you got into the Diet Analysis program using a code that came with the book- that is fine and just use that. As long as you are in the program and can use it, that is what counts.

For my Wednesday night class- TRY TO PREPARE IF YOU CAN AND READ AHEAD A LITTLE. TRY TO GET INTO DIET ANALYSIS BEFORE SEMINAR.

Everyone has the code now- both classes have got their seminar grades and that is where your code is.

To log into Diet Analysis the following is required:

1. Use the URL inside the course. The one with the book does NOT work.

2.Do not use the access codes you got with the book.

3. I have the access codes. I will put them in the COMMENT BOX FOR SEMINAR GRADES- EVEN IF THERE IS NO GRADE

4. I will not email everyone their code. It will never be lost as it will be in the seminar comment box. I will be inputting the codes today.

5. I have set up 2 sections of the course inside Diet Analysis. After you get into the website you will need the following access code also. THIS IS IN ADDITION TO THE ABOVE CODE.

Every paper you submit will have comments on it. These comments are done using the “Track Changes”

1. To turn it on: View Changes and Make Changes

To view changes do the following:

a. Open Word

b. Go to "Tools" and then click on "Track Changes" (to make sure the feature is turned on)

c. Make sure to have all of the following checked under "Show": (on the Reviewing Toolbar)

i. Comments

ii. Insertions and

iii. Deletions

iv. Formatting

2. Then you will be able to see all tracked changes.

3. Your comments will be visible as well as your grade.

Other comments and where they are

Make sure that you review any comments I make in the Dropbox return. If you have a 0 you may have left out material that I need to have included. Read the comments in the Grade area and you will see once you click on the grade, the comments I have made. This will also have other comments too.

How to Post a Discussion Board Response

1. Read the question you are responding to.
a. Make sure you are answering all PARTS of the question

2. Do not use lower case i for I; spell correctly, no IM shortcuts. This is a post that is educational and shows that you are using academic, college level writing skills.

3. Advancing the discussion, like in a class they need to post something that allows other students to add to the discussion.

4. Use the following questions and guide to help you develop a post
a. Expand on the other post
b. Ask for more information
c. Act as devils advocate
d. No less than 50 words- guideline not to count each word
e. Add websites
f. Asking questions for critical thinking
g. Add spice to discussion board- correctly- just as a devils advocate
h. Move the topic along
i. Not moving the discussion forward rather than time factor

5. Use the following questions to help you think of a new response to a peer.
a. Is your message factually accurate?
b. Is your message original? If you copy or paraphrase another source, you must cite it.
c. Is your message relevant to the issue being discussed?
d. Have you taught us anything new? [This is very important!]
e. Does your message engage others to want to participate in additional discussion?
f. Is your message written in academically appropriate fashion? [With no "chat" lingo, no spelling errors, no grammatical errors.]
